What causes a potato to turn green?

Greening is a color change in the potato when it is exposed to light (for example the neon light) for a long period of time.  Scientifically, what happens is that the green part of the potato, contains a toxic  substance called glycoalcaloïdes.  It is preferable to not eat the green part of the potato.
